Balsamic Glazed Pork Tenderloin with Polenta Cakes, Green Beans, & Apples


I told a tiny fib in yesterday's post. Originally I was going to be at a work event welcoming new students on campus and Hunter was going to be the parental guardian unit in charge. We received an email from Native1's school stating that they had issued a shit-ton (my word not theirs obvs) of parent pick up tags and they were staggering pick-up times with the later natives being released later. This (in theory) meant that Hunter would not be back home in time to be there when Native2 hopped of his first bus ride home ever. So I packed up my stuff in the office and went to pick up my eldest native. I was in line for over an hour to pick him up. Before you yell at me, we totally wanted him to ride the bus, but he is in a special program out of our regularly scheduled school location and they wont' bus him out of his zone (I'm mad about it, I think it is unfair to kids who many not have parents who can be as flexible with their time as we can). While I was waiting this hour I stayed in contact with Hunter fully expecting littlest dude to hop off the yellow cheese at any moment.


I pick up Native1, no Native2. I drive to the gym....no Native2. I change into workout clothes...no Native2. I finish my warmup run, he still isn't there. I'm starting to panic, Hunter is at home waiting probably annoyed (but not panicked, did I mention I was freaking out, definitely freaking out). Finally at 6:15ish my child arrived at home. He'll be parent pick-up today because I have training and I try really hard not to be late and not to inconvenience people (some days I'm better at this than others, Hunter can attest to this fact). This little story has nothing to do with my recipe review, I tried to think of a way to tie it in with a quip, but I got nothing so on the intended purpose of this post.


This was dinner the night before the first day of school, it is a Gobble meal. This particular box came with about 3 inches of water in the box and me reaming the poor dude on the phone a new one. I was good until he asked me what I wanted him to do rectify the situation when I called to express my concern that the box was late and had standing water with fish and pork in it. He comped the meals eventually but only after I made the suggestion that i receive at least a discount (y'all everything was saturated, even my recipe cards which I barely salvaged). The meal was fairly good, mostly straight forward to prepare. I didn't have to change anything or adjust cook times. The sauce wasn't premade. The seasoning was premixed but easy enough to replicate. Everyone ate. Calling it a win.

I'd give it higher but it was just run of the mill good not knock your socks off good (the meal I made last night was for me but not for anyone else, I'm happy to write up that review tomorrow). I also had new workout clothes arrive but they are bright and I don't wear bright for training days so you guys have to wait for those until tomorrow. Hope everyone else has (or had) a much less stressful return to school than we did.
