Vegetable Korma Curry & Turmeric Basmati Rice with Raisins

I feel like I should create a sub section of this blog called "The Catching Up Series". What follows is a blog I started and saved and said, meh I'll get back to you. I most certainly didn't. Well maybe that's a lie because here I am writing a leading paragraph about a curry dish that was made probably about 3 weeks ago. The good news is that it was a delightful curry that was so good, I definitely remember almost a month later. The bad news is that it was Gobble so if you want the exact same curry you'll need to go with a subscription. If you want the recipe the pic above should link to a pdf of the recipe "card".


I ordered a curry a few weeks ago, the Natives and Hunter ate it and seemed to like it so I took a risk and ordered another one. When I pulled it out of the fridge to make it I saw it had mushrooms. If you read my post about the Chicken dish with mushrooms, you will know that those mushrooms were not going in this meal. I made an executive call and subbed some left over chicken I had and added at little beef stock concentrate. I know it isn't a good idea to cross the meat streams but I didn't think anyone would be teleported to another dimension or anything so I went with it to try and get flavor in that I was going to miss from the mushrooms.


It paid off. Hunter was at practice so he didn't provide his input, but the natives ate very well. I'm quite proud of how fair Native2 has come with his ability to eat food he isn't totally sure about. His hatred of rice seems to have diminished and we rarely fight about food. For a really long time if he didn't want to eat something, he would put it in his mouth and chew, and chew, and chew, and chew, and you get the idea. He thought I was going to short-order cook for him and I've never ever been about that. This curry was packed with veggies. There were carrots, sweet potatoes, peas, garbanzo beans...all so good. The curry was a coconut milk base so a no go if you have a tree nut allergy but it was tasty, filling, and made for great leftovers. I had it for three meals, the natives had it for one meal each, and Hunter had it for three meals. I still have curry left over.

As I'm wrapping this up as part of the catch up series I do not in fact still have left over curry, that would be gross. I also looked and I don't have any curries coming up so I may have curried myself out. I do in fact already have one blog post fully typed, saved, and scheduled for tomorrow so I'm patting myself on the back and rewarding myself with an oreo cookie (lies, 6 oreo cookies).
