20 minute Ravioli Florentine with Creamed Spinach

You are so very welcome for that pun. Cause I know you needed it. I needed a quick dinner after the pool and before going to see the new Black Widow movie. I love Black Widow as a character...like a lot. The entire day I dressed in my best Black Widow. Black shiny workout set, black bathing suit (not pictured because it would require me asking Hunter for the photo and nope, also it is one of my more "risqué" suits), and I even went in theme for the movie. You can't see my pants but they are tight black pleather and I have on knee high heeled pleather boots. I did not do the pose...but I threatened to (Hunter was probably banking on my fear of public embarrassment).

On to the meal review. In looking at the prep for this, I didn't have much hope for flavor. I was expecting bland with too much cream and disappointment. Gatherer underestimated and should not have done so. The flavor was so incredible. Natives really loved this and so did I. I think mascarpone is the trick to a fantastic cream sauce that is light and flavorful. Cream cheese would be to heavy, and heavy cream would lack the depth. Simple ingredients to pick up from local gathering spot, quite affordable to reproduce. The nice thing is you really could go with a less expensive parmesan, sub cream cheese if you wanted, and you could probably even do frozen ravioli and come out cheaper and still pretty good (but if you don't need to save the extra say $6 dollars get the good stuff).

Rated full gallon of ice cold Milos while the sun sets and the fireflies dance across the yard and kids laugh in the background.

So I may have spent the day as a Black Widow Imposter (see you knew it would come around to that im-pasta pun somehow, it always does) this meal was the real deal.
